Spicy Mix Veg Paneer - Simrun Chopra
Cottage Cheese with Mixed Vegetables
INGREDIENTS
  • 200-250 gms of cottage cheese, cut into thick strips
  • 150 gms of french beans cut into thin strips of 2 "
  • 1 big carrot cut into strips of 2"
  • 1 red pepper cut in strips
  • 1 green pepper cut in strips
  • 1onion cut into 4 pieces
  • 1 tomato cut into 8 pieces
  • Few slitted green chillies
  • 1 onion chopped
  • 2 tsp of ginger chopped
  • 2 tsp of garlic chopped
  • 1 1/2 tomato grated
  • Salt to taste
  • Red chilli powder to taste
  • 1/2 tsp tomato sauce
  • 1 tbsp youghurt
  • 1 1/2 tbsp of dry kasturi methi leaves
  • 1/2 tsp sugar
  • 1/2 tsp coriander powder
  • 1/2 tsp onion seeds
  • 1/2 tsp whole cumin
  • 2 whole red chillies
  • 3 tbsp of oil
 
METHOD
  • Soak the paneer in warm water and let is sit for 5 to 10 mins. Remove and dry before adding.  
  • Heat ½ tbsp of oil in a pan and once it is warm add 1/4 tsp of onion seeds and 1/4 tsp of whole cumin seeds
  • Once it starts spluttering gently add in the paneer and let it cook till it turns a light brown, flip and cook the other side
  • Once done, remove the paneer and keep aside
  • In the same pan add 1/2 tbsp of oil and when the oil becomes warm
  • Add the cut carrots and beans and stir fry for few minutes
  • Then add in the cut red and green peppers and stir fry for few more minutes
  • When the vegetables are 75% done remove them and keep aside
  • In the same pan add the remaining oil when the oil becomes warm add the remaining onion seeds and cumin seeds
  • When the seeds start spluttering add the chopped onions and stir fry for few minutes
  • Now add the chopped garlic and ginger and stir fry till the onions become beige brown in colour and the ginger-garlic become soft
  • Add the grated tomato and saute till the water from the tomato dries up
  • then add the whole red chillies and stir fry for few minutes
  • Now add the red chilli powder and the coriander powder and saute for few minutes
  • Here you can add 3-4 tbsp of water to saute if the oil is too little
  • Once done add the tomato sauce and mix it in well
  • Cover and cook on low flame for few minutes while gently stirring in between
  • Now add the cut onion, tomato and slitted green chillies
  • Mix it in well in the masala and saute for few minutes
  • Mix mix the yoghurt in a 5-6 tbsp of water and remove all the lumps like a lassi
  • Mix it in well and saute for few minutes
  • Add the dried kasturi methi leaves and stir for few minutes
  • Finally add the cottage cheese strips and the vegetables
  • Mix it in all together and stir fry for few minutes
  • Then cover and cook on low flame for 5-7 minutes so that the vegetables and cottage cheese infuses with the masala.
  • Serve with roti or as a roll or even as a sandwich stuffing
