Spiny Gourd Sabzi

5 pieces if spiny gourd ,grate and keep aside (with skin)
1 onion chopped
1 tomato chopped
1 tsp ginger garlic paste
¼ cup grated coconut
few chopped green chillies
2 tbsp of chopped coriander leaves
salt to taste
red chilli powder to taste
¼ tsp turmeric powder
¼ tsp coriander powder
½ tsp whole cumin
2 baby leaves
2 tbsp of oil


Put oil in a kadhai.
When the oil gets warm Add the bay leaves and the whole cumin.
When the cumin starts to splutter.
Add the chopped onion. Saute till the onion becomes beige brown.
Add the ginger garlic paste. Saute till the raw smell of the ginger garlic goes.
Add the chopped green chillies. Stir for a minute or so.
Add the chopped tomato. Stir for few minutes.
Add the salt, turmeric, red chilli powder and coriander powder. Saute till tomato becomes soft.
Add the grated spiny gourd. Saute for 5-7 minutes.
Cover and cook on low flame till done.
Add the grated coconut, mix it in well. Saute for few minutes.
Add the chopped coriander leaves.
