Squash ki Subzi (Chow Chow Sabzi)
Ingredients
- 500 gms squash ,peeled ,deseeded and cut into big slices
- 3 tbsp oil
- 2 tsp chopped garlic
- 1 tsp chopped ginger
- 1/2 tsp mustard seeds
- 12-15 curry patta leaves
- Pinch of fennel powder (optional)
- Salt to taste
- Red chilli powder to taste
- 1/2 tsp turmeric powder
- 2 tbsp bengal gram roasted ,then powdered
Method
- Put the oil in a kadhai ,heat the oil a little
- Add the mustard seeds ,when it starts spluttering
- Add the chopped garlic and ginger
- Stir fry for few minutes
- Now add the salt, turmeric and red chilli powder to the oil
- Stir for few seconds then add the cut squash
- Mix it in well
- Add the curry patta leaves and mix it in well
- Add 1 cup water ,when it comes to boil
- Cover and cook for few minutes ,then add the fennel powder
- Cover and cook till the squash is cooked
- Now add the roasted powdered gram flour ,mix it in well
- Stir fry for few minutes .
- Done .
- Serve with dal and rice .
