Squash ki Subzi (Chow Chow Sabzi) - Simrun Chopra

Ingredients
  • 500 gms squash ,peeled ,deseeded and cut into big slices
  • 3 tbsp oil
  • 2 tsp chopped garlic
  • 1 tsp chopped ginger
  • 1/2 tsp mustard seeds
  • 12-15 curry patta leaves
  • Pinch of fennel powder (optional)
  • Salt to taste
  • Red chilli powder to taste
  • 1/2 tsp turmeric powder
  • 2 tbsp bengal gram roasted ,then powdered

Method
  • Put the oil in a kadhai ,heat the oil a little
  • Add the mustard seeds ,when it starts spluttering
  • Add the chopped garlic and ginger
  • Stir fry for few minutes
  • Now add the salt, turmeric and red chilli powder to the oil
  • Stir for few seconds then add the cut squash
  • Mix it in well
  • Add the curry patta leaves and mix it in well
  • Add 1 cup water ,when it comes to boil
  • Cover and cook for few minutes ,then add the fennel powder
  • Cover and cook till the squash is cooked
  • Now add the roasted powdered gram flour ,mix it in well
  • Stir fry for few minutes .
  • Done .
  • Serve with dal and rice .
