Stir Fried Vegetables with Egg

Stir Fry Vegetables with Hard Boiled Eggs

Have as a meal ( check with your nutritionist on portions specific to you) 
or use it as a sandwich stuffing or a roll stuffing. 
I like to eat this with just a slice of toast for breakfast too. 

 

Ingredients

  • 4 hard boiled eggs or 100 gms paneer cubes
  • 1 red capsicum cut in thin strips 
  • 1/2 green capsicum cut in thin strips 
  • 1 1/2 carrots cut into thin strips like matchstick 
  • 1 big onion sliced 
  • 2 tsp full chopped garlic 
  • Few green chillies cut into 2 
  • 2-3 whole dry red chillies broken into pieces 
  • 1 tsp dark soya /
  • 1/2 tsp of oyster sauce 
  • 2 tsp light soya sauce 
  • 1 tsp cornflour 
  • 1/2 tsp sugar 
  • Salt to taste 
  • 1/2 tsp pepper 
  • 2-3 tbsp of oil 

Method
  • In a bowl add the cornflour, dark soya/oyster sauce, light soya sauce, sugar, pepper and salt. Add 5 to 6 tbsp of water and mix well and keep aside
  • Boil and peel the eggs (if using) 
  • In a pan warm 2 tsp of oil
  • Add the whole eggs and stir fry it so that the skin of the egg turns little brown. Remove from the pan and cut each egg into 4 vertical pieces and keep aside
  • In the same pan, add the chopped garlic and stir fry for a minute or so till the edges start to turn brown
  • Add the sliced onions, and stir fry for few seconds then add in the cut whole dry red chillies and stir fry for few seconds 
  • Add the cut carrots and stir fry for a minute or so 
  • Add the cut green chillies and stir fry for few seconds 
  • Add the cut bell peppers and stir fry for few minutes 
  • Cook on high flame moving quickly to ensure the vegetables remain crunchy 
  • Now add the cornflour mixture to the vegetables and stir it in well
  • The vegetables should have have a slight coating of the sauce
  • Taste and check for salt 
  • Add the eggs (or paneer) gently and cover with the vegetables
  • Serve with plain rice/ fried rice 
Note : If you like can add 1 tomato thinly sliced just before adding the cornflour mixture.
