Stir Fry Green Dal with Greens 

Vegetarian vegan low calorie healthy recipe with greens and moong dal. diet friendly
Ingredients
  • 1 cup raw whole green dal 
  • 1 bunch of amaranth leaves (any green of your choice approximately 2-3cups of chopped greens ) 
  • 2-3 tsp oil 
  • 1/2 tsp mustard seeds 
  • 1/2 tsp whole cumin 1 tsp raw chana dal 
  • 2 tsp urad dal 
  • 4-5 pounded garlic cloves 
  • Few slitted green chillies 
  • according to taste 
  • 1 big onion chopped 
  • Salt to taste 
  • 1/4 tsp turmeric powder 
  • 1/2 tsp coriander powder 
  • 1/2 tsp cumin powder 
  • 1 1/4 tbsp roasted peanut powder 
  • 1 1/2 tbsp grated coconut 
  • 3/4-1 tbsp lemon juice 

Method
  • Take the whole green dal /lentil ,wash it throughly ,then place in a cooker ,add 2 cups of water ,add a pin h of salt. 
  • Close the lid of the cooker and cook till one whistle .Then remove from stove and keep aside .Let the cooker open naturally. 
  • Strain the dal/lentil and keep aside .
  • The lentil should be firm but soft ,should not be too soft .
  • Wash the amaranth leaves throughly (or any greens of your choice ) Let it drain so that the excess water goes out ,then chop the leaves and stem into small pieces
  • Brush a kadhai with oil .Now place the chopped leaves in it and cook till the leaves and stems are cooked and the water dries up completely.
  • Now add the cooked dal/lentil to the cooked green leaves in the kadhai 
  • Mix it in well and keep aside
  • Now take another kadhai or the same kadhai add the oil and warm it for 20-30 seconds
  • Now add the mustard seeds
  • Next add the whole cumin
  • To this add the raw channa dal and the raw urad dal
  • Stir fry for 30-40 seconds
  • Add the pounded garlic
  • Stir fry for 15-20 seconds
  • Add few slitted green chillies according to taste
  • Now add the chopped onion to the kadhai
  • Stir fry till it becomes a little soft
  • Add salt to taste keeping in mind that salt has been added to the dal/lentil
  • Next, add the turmeric powder
  • Add the coriander powder
  • Add the cumin powder
  • Stir fry for few minutes, 4-5 minutes
  • Now add the roasted peanut powder
  • Also add the of grated coconut
  • Stir fry for few minutes
  • Now add the mixed cooked dal/lentil and greens
  • Mix it in well
  • Stir fry for few minutes
  • Lastly, add the lime juice 
  • Mix it in well 
  • Can add 2-3 tsps of water if it starts catching at the bottom. 
  • Keep for few minutes .
  • Done .
