Stir Fry Long Beans - Simrun Chopra

Ingredients
  • 300 gms of long beans cut into 2" pieces
  • 1 tomato sliced
  • 2 tsp chopped garlic
  • Few whole red chillies cut into pieces
  • Salt to taste
  • 1/2 -1 tsp chilli flakes
  • 11/2 tbsp of oil
  • 1/2 tsp sugar
  • 1/2 tsp light soya

Method
  • Steam the long beans to 60-70 % done
  • Immediately put in cold water for few minutes
  • Drain and keep aside
  • Take a pan add the oil
  • Let the oil warm a little
  • Add the chopped garlic
  • Stir fry for few minutes so that the raw smell goes
  • Add the cut whole red chillies
  • Stir fry for a minute or so
  • Add the steamed long beans
  • Stir fry for a minute or so
  • Add the salt
  • Add the red chilli flakes
  • Stir fry for few minutes
  • Add the sugar
  • Stir fry for few seconds
  • Add the sliced tomato
  • Stir fry for few seconds
  • When the long beans are 90% done
  • Add the soya sauce
  • Stir fry for few minutes
  • Done .
  • Serve with plain rice /fried rice .
  • Note : the beans should be crunchy .
