A quick delicious recipe
Ingredients:
- 2 tsp oil (for initial stir-frying)
- 500g prawns, peeled and deveined
- 1/2 tbsp sesame oil
- 1/2 tsp cooking oil
- 3-4 thin slices of ginger
- 2 tbsp chopped garlic
- 2 tbsp oyster sauce
- 3/4 tsp sugar
- 12-15 pieces of scallions (white part), cut into 2" pieces
- 1/4 cup warm water
- 3/4 tbsp dark soya sauce
- 2 cups scallions, cut into 2" pieces
- 1 onion, cut into thick slices
- 3-4 tsp rice wine
- 1 tbsp roasted white sesame seeds (for garnish)
- Optional: 4-5 green chillies (cut into big pieces) or 2-3 whole dry red chillies (cut in half)
Instructions:
- Heat 2 tsp oil in a wok over high heat until it's moderately hot. Use a spatula to coat the wok with the oil evenly.
- Add the prawns to the wok and stir-fry for a few minutes until they are 80% cooked. Remove the prawns and set them aside.
- In the same wok, add 1/2 tbsp sesame oil and 1/2 tsp cooking oil. Heat the oil and then add thin slices of ginger. Stir-fry for about a minute.
- Add chopped garlic to the wok and stir-fry until the garlic starts to change color and releases a fragrant aroma.
- Add 2 tbsp oyster sauce to the wok and stir-fry for 30-40 seconds.
- Incorporate 3/4 tsp sugar into the wok and stir-fry briefly.
- Add the white part of the scallions (12-15 pieces, cut into 2" pieces) to the wok and stir-fry for a minute.
- Pour 1/4 cup of warm water into the wok and mix well. Stir-fry for another minute.
- Reintroduce the partially cooked prawns into the wok, mixing them thoroughly with the sauce. Stir-fry for a minute.
- Add 3/4 tbsp dark soya sauce to the wok and stir it in.
- Toss in 2 cups of scallions (cut into 2" pieces) and sliced onions. Mix well.
- Pour 3-4 tsp of rice wine into the wok and stir it in.
- Garnish the dish with 1 tbsp of roasted white sesame seeds.
- Optional: If you prefer a spicy kick, add 4-5 green chillies (cut into big pieces) or 2-3 whole dry red chillies (cut in half) to the wok just before adding the oyster sauce. Stir-fry for a minute before proceeding with the oyster sauce.
- Serve the Stir Fry Prawns with Spring Onions / Scallions over steamed rice or jasmine rice.
