Sukha Masala Karela (Bitter Gourd) - Simrun Chopra

Ingredients

  • 300 - 350 gms bitter gourd cut in circles
  • 3 tbsp oil
  • 1/4 tsp whole fennel (sauf)
  • 1/2 tsp whole cumin
  • 1/4 tsp asafoetida
  • 1/4 tsp turmeric powder
  • 1/2- 1tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp sugar
  • Salt to taste
  • 1 tbsp of pounded garlic
  • 1 tbsp lemon juice
  • 1 tbsp gram flour (besan )
  • 1 tbsp rice flour

 

Method

 

  • Cut the bitter gourd into circles and keep aside
  • Take a kadhai add the oil ,warm the oil a little, then add whole fennel seeds
  • Then add whole cumin seeds
  • Then add asafoetida
  • Stir fry for 20-30 seconds
  • Then add bitter gourd cut into circles ,remove the centre part
  • Stir fry for few minutes
  • Cover and cook on low flame for few minutes
  • Then add 1 tbsp of pounded garlic
  • Stir fry for few minutes
  • Next add the lemon juice and mix it in
  • After this add salt to taste
  • Then add 1 tsp sugar and stir fry for few minutes
  • Now add the turmeric, red chilli powder and coriander powder
  • Mix everything in well and cook for few minutes
  • Now add 1 tbsp of besan and 1 tbsp of rice flour mix it in well with the bitter gourd
  • Stir fry till all the masala ,besan and rice flour coat the bitter gourd
  • Keep for few seconds.
  • Now Done .
