Sukha Masala ki Bhindi (ladyfinger) - Simrun Chopra

Ingredients

  • 500gms bhindi (ladyfinger)
  • 3 tbsp oil
  • 1 big onion sliced
  • Few green chillies chopped
  • 1/4 tsp asafoetida
  • 1/2 tsp whole cumin
  • 1/2 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp dry mango powder
  • Red chilli powder to taste
  • Salt to taste

For the tarka

  • 1 tsp ghee/oil
  • 10-12 or more whole pods of garlic
  • 1 big onion cut into 6 pieces
  • 1 tomato cut into 4 pieces
  • 1-2 whole green chillies sliced

 

Method

  • Wash and wipe the bhindi well ,and cut and discard the head .Then cut it into 1"pieces and keep aside
  • Take a kadhai add the oil and warm the oil a little
  • Add to the oil the asafoetida and the whole cumin
  • Stir for few seconds
  • Then add the sliced onion
  • Stir fry for few minutes
  • Then add the chopped green chillies
  • Stir for few minutes
  • Then add the turmeric powder
  • Stir for few minutes
  • Then add the cut bhindi (ladyfinger)
  • Mix it in well and fry for few minutes
  • Then cover and cook on low flame for few minutes
  • Next add the red chilli powder, mix it in
  • Now add the salt to taste
  • Then add the coriander powder and mix it in
  • After that add the dry mango powder and mix it in well
  • Now Stir fry well for few minutes
  • Then cover and cook on low flame till the bhindi is cooked, do stir in between.
  • Now to ready the tarka ,take a pan
  • Add the ghee/oil
  • When the ghee/oil become warm add the pods of garlic
  • Stir fry for 30-40 seconds
  • Then add the cut onion pieces
  • When the garlic starts changing colour
  • Add the cut tomato pieces
  • Stir fry for few minutes
  • Lastly add 1-2 slitted vertically green chillies
  • Fry for a minute or so Then add to the cooked bhindi .
  • Mix it in well and cook for few minutes and done .
