TAMARIND JAGGERY BRINJAL
Tamarind Jaggery Brinjal
INGREDIENTS
- 600gms of brinjal (small round brinjal ,remove stem and cut into 4 or 6 pieces )
- 3 tbsp oil
- 1 medium size onion chopped
- 1/4 tsp mustard seeds
- 6-8 curry patta leaves
- 1/4 cup tamarind pulp (not thick )
- Salt to taste
- 1/2 tsp turmeric powder
- 1 tsp kashmiri red chilli
- 1/4 tsp cumin powder
- 1/2 tsp coriander powder
- 1 tbsp jaggery powder
- All the roasted powder (given below )
Ingredients to be roasted and coarsely ground and kept aside
- 1/4 tsp cumin seeds
- 1/4 tsp mustard seeds
- 1/4 tsp fenugreek seeds
- 1/2 tbsp channa dal
- 1/2 tbsp urad dal
- 2-3 whole red chillies
- 5-6 curry patta leaves
METHOD
- Take a kadhai add the oil and warm the oil
- When the oil is warm add the mustard seeds
- When it starts spluttering add the chopped onion and the curry patta leaves
- Stir fry for few minutes ,when it becomes soft
- Add the cut brinjal and stir fry for few minutes
- Then add the salt and turmeric powder and mix it in well
- Add few more curry patta leaves ans stir fry for few minutes .
- Then cover and cook for 5-7 minutes, stirring in between
- Now add the tamarind pulp and mix it in well
- Stir fry for few minutes
- Then add the red chilli powder, cumin powder, coriander powder
- And mix it in well
- Cover and cook till 90 % done
- Then add the roasted powder and the jaggery powder
- Mix it in throughly and keep for few minutes .
- Done .
