TAMARIND JAGGERY BRINJAL - Simrun Chopra

Tamarind Jaggery Brinjal

 

INGREDIENTS

  • 600gms of brinjal (small round brinjal ,remove stem and cut into 4 or 6 pieces )
  • 3 tbsp oil
  • 1 medium size onion chopped
  • 1/4 tsp mustard seeds
  • 6-8 curry patta leaves
  • 1/4 cup tamarind pulp (not thick )
  • Salt to taste
  • 1/2 tsp turmeric powder
  • 1 tsp kashmiri red chilli
  • 1/4 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1 tbsp jaggery powder
  • All the roasted powder (given below )


Ingredients to be roasted and coarsely ground and kept aside

  • 1/4 tsp cumin seeds
  • 1/4 tsp mustard seeds
  • 1/4 tsp fenugreek seeds
  • 1/2 tbsp channa dal
  • 1/2 tbsp urad dal
  • 2-3 whole red chillies
  • 5-6 curry patta leaves


METHOD

  • Take a kadhai add the oil and warm the oil
  • When the oil is warm add the mustard seeds
  • When it starts spluttering add the chopped onion and the curry patta leaves
  • Stir fry for few minutes ,when it becomes soft
  • Add the cut brinjal and stir fry for few minutes
  • Then add the salt and turmeric powder and mix it in well
  • Add few more curry patta leaves ans stir fry for few minutes .
  • Then cover and cook for 5-7 minutes, stirring in between
  • Now add the tamarind pulp and mix it in well
  • Stir fry for few minutes
  • Then add the red chilli powder, cumin powder, coriander powder
  • And mix it in well
  • Cover and cook till 90 % done
  • Then add the roasted powder and the jaggery powder
  • Mix it in throughly and keep for few minutes .
  • Done .
