Truly Chilli Chicken - Simrun Chopra

Ingredients for marination

350 gms of chicken, boneless, cut into thin pieces

  • 1/2 tsp oyster sauce
  • 1 1/2 tsp light soya sauce
  • 1/2 tsp dark soya sauce
  • 1/2 tsp sesame oil ( or any flavourless oil)
  • 1/2 tsp cornflour
  • Pinch of salt
  • 1/4 tsp sugar

Mix all the above ingredients and marinate the chicken in it for 20 to 30 mins.

 

Remaining ingredients

  • 1 tsp chopped garlic
  • 6-8 whole pods of garlic sliced
  • 1/4 cup scallions cut in 1"pieces
  • 12-15 green chillies cut in diagonal, in 1 " pieces
  • 1/4 tsp oyster sauce
  • 1 tsp light soya
  • 1/4 tsp sugar
  • 3 tbsp oil

 

Method

  • Take a wok or pan and add 2 tbsp of oil
  • Heat the oil and when the oil is hot add the marinated chicken and stir fry continuously on high flame
  • When the chicken is more or less done add all the green chillies and stir fry for a minute or two
  • Remove from wok and keep aside
  • In the same wok add the remaining oil, when the oil is warm add the chopped garlic, stir then immediately add the sliced garlic
  • Stir fry for 30-40 seconds
  • Now add the scallions and stir fry for few seconds
  • Switch of the flame and add the light soya and the oyster sauce and mix it in well
  • Put on the flame stir for few seconds
  • Then add the chicken, sugar and pinch of salt
  • Stir fry on high flame for few seconds.
  • Serve with rice or fried rice
