Tuvar Beans Ki Sabzi - Simrun Chopra
Tuvar Beans ki Subzi
Ingredients
  • 1 kg cluster beans (with the pods)
  • 1 1/2 tbsp oil 
  • 1/4 tsp whole cumin
  • 1/4 tsp whole black mustard 
  • 1/2 -1 tsp urad dal 
  • 2-3 green chillies chopped 
  • 1 onion chopped (medium to big)
  • Salt to taste 
  • 1/4 tsp turmeric powder
  • 1/2 tsp cumin powder 
  • 1/2 tsp coriander powder 
  • 2 1/2 tbsp grated coconut 
  • 2 1/2 tbsp peanuts ,roasted and crushed 
  • 1 cup chopped spinach 

Method
  • Remove beans from inside the pods and keep aside 
  • Then put the beans in a pressure cooker with little salt and water just enough to cover it and cook to one whistle. Then remove from stove and keep aside .Let the pressure cooker open naturally.
  • Now done keep aside
  • Take a kadhai add the oil.
  • Warm the oil a little then add the whole cumin, whole black mustard seeds and the urad dal .
  • Stir fry for 1 minute .
  • Next add 2-3 green chillies chopped
  • Stir fry for few seconds
  • Then add the chopped onion 
  • Stir fry for few minutes
  • Stir fry till onions become a little translucent
  • Then add salt to taste ,keeping in mind that salt was put during the cooking of the beans .
  • Stir fry for few seconds
  • Then add the turmeric powder, cumin powder and coriander powder
  • Stir fry for few minutes
  • Now add the cooked beans to the kadhai ,if there is any residue water in the cooker ,can add that too .
  • Stir fry for few minutes
  • To this now add the grated coconut
  • Then add the crushed roasted peanuts 
  • Mix it in well
  • Add the chopped spinach
  • Stir fry for few minutes
  • and cook till the spinach is done .
  • Ready .
