Mei-food Noodles
Meifoon (Rice Noodles )
Ingredients
- 1 pkt meifoon (400-500gms) Linked at the end
- 2 onions sliced
- 1carrot cut into thin sticks
- 1 bell pepper sliced
- 1 cup cabbage thinly sliced
- 1/2-2/3 cup stir fried mushrooms
- 2 cups of spring onions cut into 2"pieces
- Few slitted green chillies
- 1 tbsp of chopped garlic
- 2 tsp of chopped ginger (optional)
- 1/2 tsp pepper powder
- Salt to taste
- 1 tsp sugar
- 1 tbsp of soya sauce
- 3-4 tbsp of oil
Non -veg Version
- Add a little oil in a pan and stir fry the ones you are using
- 1 chicken breast cut in strips with salt pepper and keep aside
- 1/2 cup raw prawns ,stir fry with salt and pepper and keep aside
- 4 eggs mix together and make into a scramble with salt and keep aside
Method
- Cook the noodles according to instructions on the packet and keep aside
- Take a kadhai add the oil to the kadhai
- When the oil becomes warm add the vegetables one by one
- Starting with the carrots,then onions ,then capcicum, then cabbage and then spring onions
- Stir fry on full flame between each for about 30 secs
- The vegetables should be crunchy
- Now add the noodles,salt,soya sauce and sugar and mix it in well
- Make sure not to break the noodles while mixing.
- Stir fry for 5-7 minutes
- Add the cooked mushrooms
- If adding non veg, chicken /prawns/egg you can add it now
- Mix everything in gently and taste for the salt and adjust if needed
- Serve hot with any of my other recipes.
